Idaho Taco (Updated)
Jul. 9th, 2018 06:10 pmI really hated the picture I put with my Idaho Taco recipe, so tonight I took a new one. It looks much more appetizing now. :-) I also changed the way I made the potatoes, so I'm updating the recipe as well. You can still do it the original way, but tonight's potato tasted so much better.

1 large baking potato per serving
1 lb. ground beef
1 pkg. taco seasoning
2/3 cup water
Shredded cheese
Assorted taco toppings: lettuce, tomato, sour cream, black olives, avocado, salsa, etc.
Scrub potatoes and pat dry. Pierce potatoes with a fork, rub with oil, and sprinkle with kosher salt. Bake directly on an oven rack at 450oF 45 minutes to 1 hour, or until a knife slides into the potato with ease. If using a counter top oven, turn potatoes over halfway through cooking time. Meanwhile, brown ground beef and drain. Prepare taco meat according to directions on the seasoning packet. Serve potatoes topped with meat, cheese, and your choice of toppings.
