sandycombs: Scarecrow Couple (Default)
I'm going to start doing dinner posts. Not every day, because that's too much. But when we have a particularly good meal, I'll share.

This is what we had for dinner tonight. It's not my picture because I forgot to take one, but it looks very much like what we ate. I love quick meals like this. They come together so fast you aren't spending more time cooking than eating!



2 eggs
1 lb. ground beef
1 pkg. frozen mixed vegetables, thawed
1 cup cooked rice, leftover is fine
1/4 cup soy sauce

Scramble eggs in a large skillet sprayed with non-stick cooking spray. Transfer to a small bowl and set aside. Crumble and brown ground beef in the same skillet. Add the mixed vegetables and rice and stir until heated through. Add the scrambled eggs and soy sauce. Stir until well combined. Makes 4 to 6 servings.
