King Ranch Chicken
Jan. 15th, 2018 08:36 pmI wanted to share this super easy, super delicious recipe I made for dinner tonight, but for the life of me I couldn't get a good picture. First I took a picture of the whole casserole, fresh from the oven:

But it's blurry and you can't see the deliciousness. So, I served it up and took a picture of my plate.

This is when I realized the serving was overpowered by the sides. I'm going to share anyway, because I don't want anyone to miss out on the yum that is King Ranch Casserole. (I really need to work on my photography skills.)
1 lb. chicken, cooked and diced
1 can cream of mushroom soup
1 can diced tomatoes with green chilies (e.g. Rotel)
Broken tortilla chips (I like nacho cheese Doritos, but any chip will work)
Shredded cheese
Spray a 11x7 casserole dish with non-stick cooking spray. Cover the bottom with a layer of chips. Sprinkle chicken over chips. Stir together soup and tomatoes and spread over top of chicken. Top with a layer of cheese. Bake at 350oF for 30 minutes, or until cheese is browned and casserole is bubbly.
